Chinese Sauces: The Low-Down

It must be said that there are a LOT of Chinese sauces. We’re going to list our favourites and the one’s we like to use most often. We’ll add Amazon links for the ones we recommend.



Used for seasoning and overall colouring of the dish. You can get light and dark soy sauce. Lighter just means that the sauce is lighter in colour and also thinner.

If you want to buy in bulk we do recommend Kikkoman’s Soy Sauce, the 1 litre bottle, it’ll save you constantly adding it to your shopping list and it’s also a pretty good brand.

Kikkoman Soy Sauce, 1 ltr

Amoy Dark Soy Sauce, 250ml



As well as a dip in recipes like crispy duck, we like to use a teaspoon of hoi sin sauce sometimes in dishes that have a soy sauce base like our Soy Sauce Chicken Wings. Hoi sin and honey make a good sauce combo which just adds that special something to a dish.

Flying Goose Hoi Sin Sauce 455ml Bottle



Mainly used as an accompaniment to a dish. Sweet chilli sauce actually isn’t as spicy as things like chilli oil and people tend to find that the sweetness adds a nicer taste to their meal. We love and recommend adding on top of noodles like on our Baked Chicken Ramen Noodle Soup dish.

Blue Dragon Sweet Chilli Dipping Sauce



Used as a seasoning normally alongside soy sauce. Can be used to thicken sauces slightly as well as using the cornflour mixture method.

Lee Kum Kee Panda Oyster Sauce, 510g



This is a sauce that can be used in dishes that are steamed, as well as stir fried, and can be pretty spicy. We recommend Lee Kum Kee’s Black Bean Garlic Sauce as it’s really convenient as you don’t need to create your own black bean sauce and you can just add it to any recipe to give some spice to your dish. Our favourite is our King Prawn with Green Peppers and Black Bean Sauce recipe.
