Beef and Broccoli Stir Fry - Chinese Recipes for All

Serves 2

For the beef marinade:

  • 150g stir fry beef strips
  • A pinch salt
  • A pinch sugar
  • 1/2 tsp cornflour
  • 1/2 tsp light soy sauce
  • 1/2 tsp brandy, for more flavour (optional)
  • 1 tsp vegetable oil
  • 1 tsp water

For the dish:

  • 1/2 onion, sliced
  • 1/2 carrot, sliced
  • 4 mushrooms, halved
  • 200g broccoli, cut into 1 inch broccoli bits
  • 1 ginger slice
  • 1 garlic clove, diced
  • 40ml chicken stock (this is optional, can use water)
  • 1/4 tsp salt, or to taste
  • 1 tbsp soy sauce, or to taste
  • 1 tsp cornflour mixture

Preparation

Marinade the beef with the marinade ingredients. Set aside in a bowl, you can let it rest for 15 minutes or cook immediately.

Prepare the ingredients. Slice the onion, carrots, mushrooms, broccoli, ginger and dice the garlic clove.

Prepare the cornflour mixture. Also prepare the chicken stock if you want to use it.

Heat wok on high heat, without oil, until hot.

Fry beef for 2 minutes and set aside.

Heat 1 tbsp oil in wok on high heat until hot.

Add garlic and ginger and fry for 30 seconds. Then add the onions and carrots and stir fry for 2 minutes.

Add the broccoli and mushrooms and fry for 3 minutes.

Then add the beef (including any juices from the bowl) into the pan, and then add 6 tbsp water (or chicken stock) and cook with the lid on for 3 minutes on medium heat.

Add the salt, soy sauce to taste. Then gradually add cornflour mixture and stir. Once sauce has thickened stop adding. If you've added too much you can add water back it to loosen the sauce again. Cook for further 1 minute.
