A beef and beansprouts dish

For the beef

  • 150g beef, cut into rectangle strips
  • A pinch salt
  • A pinch sugar
  • 1/2 tsp cornflour
  • 1/2 tsp light soy sauce
  • 1/2 tsp brandy, for more flavour (optional)
  • 1 tsp vegetable oil
  • 1 tsp water

For the dish

  • 1 tbsp vegetable oil
  • 1/2 onion, sliced
  • 1 clove garlic, finely chopped
  • 1 slice ginger
  • 200g, beansprouts, washed and drained
  • 1 tsp oyster sauce
  • 2 pinches white pepper
  • 1 pinch salt
  • 1 tsp cornflour mixture
  • 1 spring onion, sliced
  • 1 tsp soy sauce, or to taste

Preparation

Marinade the beef slices with salt, sugar, cornflour, light soy sauce, brandy, vegetable oil and water and mix well. Can set aside for 30 minutes or cook immediately.

Heat up wok on high heat, no need for any oil, and fry beef slices for 2 minutes. Set aside in bowl.

Heat oil on high heat. When hot, fry onions, ginger and garlic for 1 minute.

Add beansprouts and fry for 30 seconds. Then add in the beef and fry for further 30 seconds.

Add 4 tbsp water. When it starts to boil add oyster sauce, pepper and salt and mix. Then gradually pour in cornflour mixture and stir until sauce is thickened. Cook for 1 and a half minutes.

Add spring onions to wok and mix in. Add soy sauce to taste. Serve with boiled rice or noodles.
