Ho Fun noodles are one of the best types of noodles out there. They are flat shaped rather than round, like egg noodles are. They are probably best found in oriental supermarkets and can be bought wet or dried (we are using dried in this recipe). Basically wet noodles can be fried straight away, dried noodles you need to boil them up similar to pasta.
Time: Prep 6 mins / Cooking 10 mins
Prepare the beef and marinade. Season the beef with salt. Add egg white and mix. Then soy sauce, cornflour and vegetable oil and mix. Set aside.
Prepare the beansprouts and spring onions.
Cook the 4mm rice noodles, according to the packet, and use 300g noodles for this dish.
Heat wok on high heat. Add 1 tbsp vegetable oil. Add in the marinated beef and fry to brown both sides for about 1 and a 1/2 minutes. Take out the beef onto a plate and leave to one side.You'll find that blood may seep out into the bowl from the beef. Do not pour this into the noodles later.
Heat wok on high heat. Add 2 tbsp vegetable oil again into wok and wait till hot. Add in the noodles, then add in the beansprouts and stir constantly. Fry for 1 minute.
Add in the salt. Then add the beef being careful not to pour any blood juices from the beef earlier. Add in the soy sauce and keep stirring to brown the noodles. Next add the spring onions to the wok. If the noodles are sticking to the wok we'd recommending adding a bit more vegetable oil. Fry for 1 and a 1/2 minutes and then serve.
Extra Notes: Double the mixture if you would like to cook for 2.
