Chicken and Broccoli Vegetable Stir Fry - Chinese Recipes For All

Easy to put together dish

Chicken and veg, seriously what more could you ask for? Really easy to cook, give this dish a go!

Serves 2

For the chicken marinade:

  • 1/2 tsp cornflour
  • 1/4 tsp salt
  • 1/4 tsp sugar
  • 1/2 tsp soy sauce
  • 1/2 tsp vegetable oil

For the dish:

  • 1 chicken breast, cut into slices
  • 1/2 onion, sliced
  • 1/2 carrot, sliced
  • 4 mushrooms, halved
  • 200g broccoli, cut into 1 inch broccoli bits
  • 1 ginger slice
  • 1 garlic clove, diced
  • 40ml chicken stock (this is optional, can use water)
  • 1/4 tsp salt, or to taste
  • 1 tbsp soy sauce, or to taste
  • 1 tsp cornflour mixture



Prepare ingredients. Slice the chicken and place into a bowl. Then slice the onion, carrots, mushrooms, broccoli, ginger and dice the garlic clove.


Marinade the chicken with the marinade ingredients. You can let it rest for 15 minutes or cook immediately.


Prepare the cornflour mixture. Also prepare the chicken stock if you want to use it.

Ready? Let's cook!


Heat wok on high heat (without oil) until hot.


Cook chicken for 1.5 minutes and set aside.


Heat 1 tbsp oil in wok on high heat until hot.


Add garlic and ginger and fry for 30 seconds. Then add the onions and carrots and stir fry for 2 minutes.


Add the broccoli and mushrooms and fry for 3 minutes.


Then add the chicken (with the chicken juices from the bowl) into the pan, and then add 6 tbsp water (or chicken stock) and cook with the lid on for 3 minutes on medium heat.


Add the salt, soy sauce to taste. Then gradually add cornflour mixture and stir. Once sauce has thickened stop adding. If you've added too much you can add water back it to loosen the sauce again. Cook for further 1 minute.
