This is really easy to make and perfect for a starter or when you're feeling like you need a pick-me-up. You can even use leftover chicken for this which makes it even quicker to cook up.
Time: Prep 5 mins / Cooking 5 mins
Boil a small pan of water. When boiling put in the chicken strips and boil for 3 minutes. Drain the water and allow to cool.
Cut the chicken strips into thinner strips and set aside.
Pour 500ml water into a pan on high heat. Add in mushrooms and cook for 2 minutes, the water should start to boil.
Add in chicken strips. Then add white pepper, soy sauce, salt and sesame oil. and boil for 1 minute. Place the lid on and boil for a further minute.
Serve in a bowl and garnish with spring onions.
