This is really easy to make and perfect for a starter or when you're feeling like you need a pick-me-up. You can even use leftover chicken for this which makes it even quicker to cook up.

Serves 2

  • 1/2 chicken breast, cut into large rectangle strips (don’t cut them into thin strips until after preparation, see below)
  • Extra water, for preparation see below
  • 500ml water, for soup
  • 2 mushrooms, sliced
  • A pinch, white pepper or to taste
  • 1 1/2 tsp , soy sauce
  • A pinch, salt or to taste
  • 1/2 tsp , sesame oil
  • 1 spring onion, slice green part thinly

Preparation

Boil a small pan of water. When boiling put in the chicken breast and boil for 3 minutes. Drain the water and allow to cool.

Cut the chicken strips into thinner strips and set aside.

Ready? Let's cook!

Pour 500ml water into a pan on high heat. Add in mushrooms and cook for 2 minutes, the water should start to boil.

Add in chicken strips. Then add white pepper, soy sauce, salt and sesame oil. and boil for 1 minute. Place the lid on and boil for a further minute.

Serve in a bowl and garnish with spring onions.
