Egg fried rice is a simple dish to go alongside your mains. Garnished with sliced spring onions, this recipe will taste delicious. It is simple to cook and you can even use leftover boiled rice (i.e. pre-cooked from your Chinese dinner the day before). If this is the case, once you add the rice into the wok, fry for 5 minutes longer to ensure the rice is heated up.
Time: Prep 20 mins / Cooking 10 mins
Prepare rice, see recipe for boiled rice. Leave it to cool before cooking.
Heat oil in a wok, on high heat until hot.
Pour beaten egg into wok, stirring constantly. When egg has cooked a little into a scramble (30-45 seconds) add in the cold boiled rice.
Fry for 6 minutes, pressing out any lumps.
Add salt, white pepper and soy sauce to taste and fry for another 2 minutes.
Serve and add spring onions on top.
