This dish is definitely for all those mushroom lovers out there! If you want add some finely diced onions for extra flavour. This is one of our favourites. Accompany with a meaty main.
Time: Prep 20 mins / Cooking 10 mins
See recipe for boiled rice. Cook the rice and set it aside to cool.
Wash the mushrooms first and then slice them.
Heat oil in a wok, on high heat until hot.
Stir fry the mushrooms for 2 minutes. Then place the mushrooms in a dish to the side.
Add oil in the wok and heat until hot. Pour beaten egg in, stirring constantly. When egg has cooked a little into a scramble (about 30 seconds) add the boiled rice and fry for three minutes. If the rice has been cooled and cold, fry for 6 minutes instead.
Now add the mushrooms, fry with the rice for 2 minutes.
Finally add salt, white pepper and soy sauce to taste.
Serve and garnish with spring onions.
