An understated recipe. Goes excellently with a meaty main or mixed vegetables. The addition of beansprouts in this recipe make it a crunchy number and gives the noodles a refreshing taste. Did you know chow mein is a literal translation of “fried noodles” in Chinese?

Serves 2

  • 1 tbsp, vegetable oil
  • 200g, beansprouts
  • 300g, egg noodles (not dried noodles, if you have dried cook them as per instructions on packet and cool them before using here)
  • 1/2 tsp salt, or to taste
  • 1/2 tsp sesame oil
  • 1 tbsp soy sauce, or to taste
  • 1 spring onion, sliced thinly

Preparation

If you have dried noodles, cook them as per instructions. Leave aside and cool completely before using.

Heat oil in a wok, on high heat until hot.

Fry the beansprouts and noodles for four minutes

Add salt, sesame oil and soy sauce to taste and fry for another 1 minute.

Serve with spring onions on top.
