A clear Chinese soup that is great as a starter for a tasty palate cleanse or even to be used as a stock base for noodle soup!
Time: Prep 20 mins / Cooking 90 mins
Start boiling 3 litres of water in a 5 litre pan.
Prepare the vegetables.
Boil a small pan of water and when boiled add pork chops in for 5 minutes on medium heat. Pour away the water and give the chops a wash to wash away anything that comes out. Cut off the fat from the pork chops.
Once the pan of water is boiling add in the pork, carrots, potatoes and celery.
Boil for 1.5-2 hours on medium heat.
After this time, add 2 tsp salt, or to taste and stir in.
Skim off any excess oil or froth on top of the soup. Serve.
