Ingredients:

1 tbsp, vegetable oil
½ carrot, sliced
½ onion, sliced
½ green pepper, diced
4-6 mushrooms, sliced
1 handful, beansprouts
1 pack, noodles
A pinch of salt, or to taste
1 tsp soya sauce, or to taste
Spring onions, sliced (optional)

Prepare and slice the vegetables

Cooking instructions:

  1. Heat oil in a wok, on high heat until hot.

  2. Add the carrots, onions and green peppers and fry for 2 minutes. Then add in the mushrooms and fry for an extra minute. Once done place the vegetables in a dish to the side.

  3. Next, stir fry the beansprouts and noodles for two minutes.

  4. Add the vegetables back in and fry for a further two minutes

  5. Now add salt and soya sauce to taste and fry for one minute. Serve.

Extra notes: For extra garnishes add 1 bunch chopped spring onions.
